Fried Green Tomato and Prosciutto Sandwich

Every once in awhile, amidst driving hunger you discover a great dish, this is one of those. I first made this for my brother because I had leftover bacon and a green tomato begging to be fried. This Sunday when I got to Whole Foods and saw all the fresh green tomatoes, and then over in the deli area prosciutto, my mind was concocting this delectable feast with my special twist! Here’s how to put this great sammie together:

2-3 Green Tomatoes
1/2 c. of flour
1/2 cup of bread crumbs
2 slices for every sandwich of prosciutto
1/4 tsp. of ground cayenne red pepper
1 tsp. of either Emeril’s Original Essence or Tony Cachere’s Creole Seasoning
1 Tbsp. Olive Oil
Loaf of Walnut Bleu Cheese bread (or bread of your choice)
Leaf Lettuce
Canola Mayonaisse
Pepper to taste

Slice your tomatoes. In a large skillet pour in Olive Oil and begin heating on medium heat. In a seperate skillet start frying the slices of prosciutto. Mix the flour, bread crumbs, red pepper, and cajun seasonings and put slices of green tomatoes in coating each side. <
Get your oil hot enough that it looks dreamy and then add tomatoes one at a time and fry till dark golden on both sides.

Fry the pastrami until lightly crisp and set aside to drain and cool. Do the same with tomatoes. Take loaf and cut sandwich slices. Put mayonaisse on both pieces of bread and grind some pepper on each slice. add leaf lettuce to one side then build other side with fried green tomatoes, top with prosciutto. put sandwich together and enjoy. Don't let the tomato cool off too much that's half the yumminess the warmth in the sandwich. Absolutely delish! Enjoy! Peg
