Tomato Palooza

So many scrumptious tomatoes lots of recipe ideas!

I don’t know about you but I can’t watch the new Cooking Channel and not be inspired. Even more so when I go into Whole Foods and see a plethora of tomatoes, all kinds, heirloom, green, roma it tintillates the mind. It’s like a Tomato Concert or a Tomato Palooza, I can’t wait to get home and create!

Creation No. 1- Tomatoes cut up add 1 serrano or red chili pepper seeded, pour Olive Oil over it, cut a handful of cilantro, add, squeeze a lime, add garlic powder, and black pepper to taste, VOILA!

Heirloom Tomato Salad

Creation No. 2 Cold grilled Salmon, Walnut Bleu Cheese Bread and the salad from above…perfect on a hot summer night!

Creation No. 3 because that great salad goes on everything is a Turkey Wrap. First add as a spread Out To Lunch Green Chili Hummus (http://www.outtolunch.ws/) Then 2 pieces of Turkey to Ezekial Sprouted Tortilla (www.foodforlife.com). Next layer Tomato Salad over turkey. Then there’s a little trick I do at the salad bar, I know I cannot eat a whole package in a week by myself of shredded cabbage and shredded beet. I mix it all up in a small container that charges by the pound. That way I get an excellent healthy mix and it doesn’t go off on me. Add a little red pepper roasted pumpkin seed, fold and eat.

I am not done creating, have a bit of a hot dish with roasted tomatoes and Chicken Cilantro Sausage, but waiting for rain later in week. Hope you enjoy my tips above, stay cool out there, Peg.
